Our favorite way to enjoy 99% of mushrooms is to slice them thin and saute them with salted butter until they are golden brown. Add a bit of salt/pepper or mix it up with a dash of soy sauce.
Below are some specific recipes and dishes grouped by mushroom.
Lion’s Mane
Pan-fried Lion’s Mane Steaks
Ingredients:
– 1 pound Lion’s Mane
– 3 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tsp togarishi chili powder
– salt and pepper to taste
Instructions:
– Cut Lion’s Mane into 1/2 inch steaks, smush and flatten with the side of your knife
– In a bowl, coat the Lion’s Mane with the sauce
– Heat avocado/olive oil/sesame oil in a skillet on medium high heat
– Add steaks after the pan is hot, letting them sit until golden brown (2-3 minutes) then flip for other side
– Remove when golden brown on both sides and serve immediately

Pulled Pork style Lion’s Mane Slaw Burger
Pull apart lion’s mane and soak in a bbq or asian marinade. Saute with or without onions. Add cole slaw, pickles and some fried onions. Smother bun in favorite condiments and enjoy.
Pizza with Lion’s Mane
Add strips of lion’s mane as a topping. Either briefly saute before baking or bake with pizza.

Lion’s Mane Crepes/Pancakes
Add a couple tablespoons of ground lion’s mane powder to pancake or crepe batter. Enjoy sweet or savory. (This is how we get our kids to eat it).
